PROSCUITTO WRAPPED BARRAMUNDI
YIELDS: 4 servings
4 Classic Seafood barramundi fillets, 8 oz. each
½ lb. The Cheese Shop Fontal, sliced
2 sprigs fresh thyme, pulled from stem
8 slices prosciutto
1 bunch asparagus, cleaned
1 lemon, zested
1 T cooking oil
1. Arrange Fontal slices on top of barramundi.
2. Sprinkle with thyme.
3. Wrap each filet with 2 slices of prosciutto.
4. Lightly oil a grill pan (or skillet) and over medium heat, cook barramundi 3 to 4 minutes until each side until firm.
5. Serve with grilled or steamed asparagus and top with lemon zest.
